Almond Cookies

gluten and dairy free almond cookies

MAKES 7 COOKIES

  • Gluten Free

  • Dairy Free

INGREDIENTS

  • 1 1/4 cup almond meal

  • 1/2 cup gluten free flour + 2 tbsp

  • 1/2 cup coconut sugar

  • a pinch of salt

  • 1 tsp baking powder

  • 1/4 cup nuttlex, melted

  • 1 egg

  • 1/2 tsp almond extract

  • 2 tbsp maple syrup

  • a handful of flaked almonds + extra for decoration

  • icing sugar for decoration

METHOD

  1. Preheat oven to 180 degrees C

  2. Add dry ingredients to a mixing bowl

  3. Add in wet ingredients to form a dough

  4. Gently fold in flaked almonds

  5. Spoon out tablespoons of mixture onto a lined baking tray & gently press down and mould into cookies using wet hands

  6. Sprinkle with extra almonds & bake for 10-12 mins or until golden

  7. Remove from the oven & let cool before sprinkling with icing sugar
