Almond Cookies
MAKES 7 COOKIES

INGREDIENTS
1 1/4 cup almond meal
1/2 cup gluten free flour + 2 tbsp
1/2 cup coconut sugar
a pinch of salt
1 tsp baking powder
1/4 cup nuttlex, melted
1 egg
1/2 tsp almond extract
2 tbsp maple syrup
a handful of flaked almonds + extra for decoration
icing sugar for decoration
METHOD
Preheat oven to 180 degrees C
Add dry ingredients to a mixing bowl
Add in wet ingredients to form a dough
Gently fold in flaked almonds
Spoon out tablespoons of mixture onto a lined baking tray & gently press down and mould into cookies using wet hands
Sprinkle with extra almonds & bake for 10-12 mins or until golden
Remove from the oven & let cool before sprinkling with icing sugar
