Gluten Free Banana Bread

INGREDIENTS

  • 2 bananas mashed

  • 2 eggs

  • 1/4 cup maple syrup

  • 1/4 cup melted coconut oil

  • 1/2 cup oat flour or GF flour of choice

  • 3/4 cup almond meal

  • 1 tsp cinnamon or 2 tbsp banana bread spice mix

  • 2 tsp baking powder

  • a pinch of salt

METHOD

  1. Preheat oven to 180 degrees celsius

  2. Combine wet ingredients in a mixing bowl - bananas, eggs, maple syrup, coconut oil

  3. Combine dry ingredients in a separate bowl - flour, almond meal, cinnamon, baking powder and salt

  4. Combine wet and dry ingredients and gently mix together

  5. Pour mixture into a lined baking tin

  6. Bake in preheated oven for 35-40 mins

  7. Once cooked through and browned on top, let cool and serve!
