Teriyaki Chicken Poke Bowl

INGREDIENTS
Breast chicken about 700g-1kg
Iceberg lettuce
Spinach
Carrot
Cucumber
Capsicum
Shallots
Avocado
Mayonaise
Sesame seeds
Rice
How much you use will depend on how many people you are feeding. If I’m making this for 4-6 people I will use at least 1 lettuce, 2 carrots, 2 cucumbers, 2 capsicums plus a whole avocado
TERYAKI SAUCE
1/3 cup tamari/soy sauce
1 tbsp water
1 tbsp honey
1 tbsp garlic or garlic oil if you have IBS
1 tbsp ginger
Small handful thinly sliced shallots
METHOD
Prepare teriyaki sauce & marinate your chicken. Let chicken sit in sauce while you prepare the rest of the ingredients.
Wash and chop lettuce, cucumber & capsicum, grate carrot, wash spinach and mash avocado
Cook your chicken on the stove
Prepare your rice either in rice cooker or I sometimes just use microwave rice
Once chicken is cooked, place all your ingredients in a bowl & top with mashed avo, mayo, sesame seeds & more teriyaki sauce if needed
