Teriyaki Chicken Poke Bowl

INGREDIENTS

  • Breast chicken about 700g-1kg

  • Iceberg lettuce

  • Spinach

  • Carrot

  • Cucumber

  • Capsicum

  • Shallots 

  • Avocado

  • Mayonaise

  • Sesame seeds 

  • Rice 

How much you use will depend on how many people you are feeding. If Iโ€™m making this for 4-6 people I will use at least 1 lettuce, 2 carrots, 2 cucumbers, 2 capsicums plus a whole avocado

TERYAKI SAUCE

  • 1/3 cup tamari/soy sauce

  • 1 tbsp water

  • 1 tbsp honey

  • 1 tbsp garlic or garlic oil if you have IBS

  • 1 tbsp ginger

  • Small handful thinly sliced shallots 

METHOD

  1. Prepare teriyaki sauce & marinate your chicken. Let chicken sit in sauce while you prepare the rest of the ingredients.

  2. Wash and chop lettuce, cucumber & capsicum, grate carrot, wash spinach and mash avocado 

  3. Cook your chicken on the stove

  4. Prepare your rice either in rice cooker or I sometimes just use microwave rice

  5. Once chicken is cooked, place all your ingredients in a bowl & top with mashed avo, mayo, sesame seeds & more teriyaki sauce if needed
