Sweet Potato Hash Browns/Fritters
METHOD
Peel & grate your sweet potato, carrot & zucchini, squeeze out excess liquid & place in a bowl
Add the flour, baking powder, paprika & salt/pepper to the grated veges
Add egg & milk, stir to combine mixture
Heat some oil in a pan & drop in spoonfuls of mixture, flatten out and cook on either side until browned
Enjoy as a side for brekky, lunch or dinner!
