Sweet Potato Nachos

INGREDIENTS
1 medium sweet potato
500g beef mince
1 bottle tomato passata sauce
Lettuce
Carrot
Mashed avocado
Cheese of your choice (I use goats cheese)
METHOD
Wash & chop your sweet potato into thin circles: season with turmeric & cinnamon, bake at 200 degrees celsius for 20-30 mins or until crispy.
Wash and chop lettuce, grate the carrot and mash the avocado.
Cook the beef mince in garlic oil and season with paprika, ground cumin. Once cooked, add 1 bottle of tomato passata.
Serve meat in a bowl on top of lettuce & carrot. Top with mashed avocado & cheese of your choice.
Place sweet potato chips around the sides of your bowl.
