Homemade Schnitzel and Salad
How to crumb:
Mix together some almond meal & Italian herbs in a bowl - how much you need will depend on how many pieces of schnitzel you are crumbing
Whisk up an egg
Dip your meat in the egg allowing excess to drain off
Coat with the almond mixture, repeat until you have used up all of your meat
Heat some olive oil in a pan & fry off your schnitzels until browned on both sides
I served my schnitzel with a light salad & a sesame mustard dressing. The salad is a mixture of:
Spinach
Cucumber
Capsicum
Roasted sweet potato
Sesame Mustard Dressing:
1 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp organic seeded mustard
1 tbsp tamari or soy sauce
1 tbsp sesame seeds
