Pumpkin Salad

SERVES 4-6

  • Gluten Free

  • Vegetarian

INGREDIENTS

  • Spinach

  • 1/2 a butternut pumpkin, roasted

  • 1 avocado

  • Goats cheese or feta to top

METHOD

  1. Chop pumpkin & place in the oven on 200 degrees C until cooked through – this will usually take 30-40 mins

  2. Once pumpkin is cooked, assemble your salad - start with spinach, add the roasted pumpkin, chopped up avocado & sprinkle with cheese
