Pumpkin Salad

INGREDIENTS
Spinach
1/2 a butternut pumpkin, roasted
1 avocado
Goats cheese or feta to top
METHOD
Chop pumpkin & place in the oven on 200 degrees C until cooked through – this will usually take 30-40 mins
Once pumpkin is cooked, assemble your salad - start with spinach, add the roasted pumpkin, chopped up avocado & sprinkle with cheese
