Cheats Fried Rice

SERVES 2-4

  • Gluten Free

  • Dairy Free

  • Vegetarian

INGREDIENTS

  • 2 packets of microwaveable jasmine rice by Tilda

  • A handful of mushrooms

  • 1 stem of shallots

  • 2 large handfuls of green beans

  • 1 bunch broccolini

  • 2 small carrots

  • 2 eggs, whisked

  • Olive oil

  • Tamari or soy sauce

  • Sesame seeds & chilli flakes ( to top)

RECIPE

1. Prepare your veggies by washing & chopping the mushrooms, shallots, green beans & broccolini, as well as grating the carrots 

2. Begin your cooking by frying off the mushrooms & shallots in a pan with some olive oil 

3. Add in the green veg & pop the lid on to steam through 

4. Once the veg is ready, move it to the side of the pan & add in 2 whisked eggs, let the eggs cook 

5. Whilst the egg is cooking, in the microwave steam 2 x packets of fragrant jasmine @tildariceau

6. When the egg is cooked, use a wooden spoon to gently chop & toss through the greens

7. Add in the steamed rice & grated carrot, mix through with a dash of tamari

8. Serve in a bowl & top with sesame seeds, chilli flakes & extra shallots
