Mexican Bowl

SERVES 2-4

  • Dairy Free

INGREDIENTS

  • 500g grass fed beef mince

  • Garlic oil

  • Cumin, paprika & chilli flakes

  • 1 small tin of tomato paste

  • Iceberg lettuce

  • 1 punnet of baby tomatoes

  • 1 avocado

  • Greek yogurt / sour cream / cheese

  • 1 bag of fircracker rice by Tilda

RECIPE

  1. Cook beef mince in garlic oil & season with plenty of cumin, paprika & chilli flakes. Add in 1 small tin of tomato paste and cook through.

  2. While the meat is cooking, wash & chop some iceberg lettuce, dice some baby tomatoes & mash the avocado with lime & salt.

  3. Once the meat is cooked, steam the firecracker rice in the microwave for 2 mins.

  4. Serve the rice & mince in a bowl and top with the shredded lettuce, tomatoes & avo.

  5. You can also add a dollop of greek yogurt as a healthier sour cream option as well as cheese.
