Mexican Bowl

INGREDIENTS
500g grass fed beef mince
Garlic oil
Cumin, paprika & chilli flakes
1 small tin of tomato paste
Iceberg lettuce
1 punnet of baby tomatoes
1 avocado
Greek yogurt / sour cream / cheese
1 bag of fircracker rice by Tilda
RECIPE
Cook beef mince in garlic oil & season with plenty of cumin, paprika & chilli flakes. Add in 1 small tin of tomato paste and cook through.
While the meat is cooking, wash & chop some iceberg lettuce, dice some baby tomatoes & mash the avocado with lime & salt.
Once the meat is cooked, steam the firecracker rice in the microwave for 2 mins.
Serve the rice & mince in a bowl and top with the shredded lettuce, tomatoes & avo.
You can also add a dollop of greek yogurt as a healthier sour cream option as well as cheese.
