Pad Thai Style Chicken Noodles

SERVES 3-4

  • Gluten Free

  • Dairy Free

INGREDIENTS

  • 2 large chicken breasts 

  • 2 small carrots 

  • Beans

  • 1 bunch of broccolini 

  • 1 capsicum 

  • Handful of chopped shallots 

  • 1/2 lemon

  • 1 packet of Pad Thai style noodles

  • 2 tbsp tahini 

  • Home made sauce (recipe below)

  • Sesame seeds & chilli (to top)

HOMEMADE SAUCE

Combine 1/4 cup Tamari or soy sauce, 1 tbsp ginger and 2 tbsp fish sauce in a jar & shake.

RECIPE

  1. Begin by poaching the chicken in boiling water until cooked through 

  2. Prepare home made sauce

  3. Grate carrot, chop beans, broccolini & capsicum 

  4. Once the chicken is cooked take out of the water and shred, squeeze lemon juice over the chicken and set aside 

  5. Cook the noodles as per packet instructions 

  6. In your pan, add the veg with some garlic oil and steam through then add in the cooked noodles and sauce, mix to combine 

  7. Remove from the heat & add in the chicken. Stir through the tahini. 

  8. Serve in a bowl and top with shallots, sesame seeds & chilli flakes
