Wash & chop rhubarb into medium sized cubes
Place into a saucepan on the stove with a little bit of water
Add coconut or brown sugar & lightly stir
Let simmer for 5 mins
Mix up a little when water starts to come through & then continue to let simmer
Rhubarb will turn into a thick compote, let sit for 10 mins, don’t stir too much as it’s better a little clumpy
Transfer to a container & store in the fridge
