Homemade Rhubarb Compote

MAKES 8-10 SERVINGS

  • Gluten Free

  • Vegan

INGREDIENTS

  • 1 bunch fresh rhubarb

  • 2 heaped tbsp of coconut sugar or brown sugar 

METHOD

  1. Wash & chop rhubarb into medium sized cubes

  2. Place into a saucepan on the stove with a little bit of water

  3. Add coconut or brown sugar & lightly stir

  4. Let simmer for 5 mins

  5. Mix up a little when water starts to come through & then continue to let simmer

  6. Rhubarb will turn into a thick compote, let sit for 10 mins, don’t stir too much as it’s better a little clumpy

  7. Transfer to a container & store in the fridge
