Fluffy Sunday Morning Pancakes

SERVES 1

  • Gluten Free

  • Dairy Free

  1. Blend the following ingredients: 

  • ½ cup buckwheat flour

  • 1 egg

  • 1 tsp baking powder

  • 1 tsp vanilla 

  • Dash of almond milk

2. Once blended: 

  • Heat 1 tbsp coconut oil on medium heat 

  • Pour mixture into pan & cook each side for 1-2 mins until you see bubbles & then flip. Repeat until you have used up your mixture. This should make about 3 large pancakes. 

  • Top with your favourite toppings. My favourites are: 

    • Blueberries 

    • Yogurt: Greek or coconut 

    • Maple Syrup 

    • Peanut butter
