Fluffy Sunday Morning Pancakes

Gluten Free
Dairy Free
Blend the following ingredients:
½ cup buckwheat flour
1 egg
1 tsp baking powder
1 tsp vanilla
Dash of almond milk
2. Once blended:
Heat 1 tbsp coconut oil on medium heat
Pour mixture into pan & cook each side for 1-2 mins until you see bubbles & then flip. Repeat until you have used up your mixture. This should make about 3 large pancakes.
Top with your favourite toppings. My favourites are:
Blueberries
Yogurt: Greek or coconut
Maple Syrup
Peanut butter
