Vegan Raspberry Muffins
MAKES 12 MUFFINS

INGREDIENTS
2 cups spelt flour (or GF flour for a GF option)
1/4 cup coconut sugar
2 tsp baking powder
1 tbsp Apple Cider Vinegar
3 chia eggs
1/3 cup melted coconut oil
1 cup coconut milk
2 tbsp maple syrup
2 cups frozen raspberries
METHOD
Preheat oven to 180 degrees celsius
Make your chia eggs by combining 3 tbsp of chia seeds with 6-8 tbsp of water and let sit while you prepare the rest of the ingredients
Combine dry ingredients in a mixing bowl: flour, coconut sugar and baking powder
Add wet ingredients to the dry: ACV, coconut milk, coconut oil, maple syrup and chia eggs
Gently fold through raspberries
Grease a muffin tin with some coconut oil and evenly pour mixture into each muffin hole
Top each muffin with some extra coconut sugar and bake for 20 mins
