Frozen Raspberry Slice

MAKES 12 PIECES

INGREDIENTS

Base layer

  • 1 cup dessicated coconut

  • 1 cup almonds

  • 2 tbsp almond butter

  • 10 dates

  • 3 tbsp cacao powder

  • 1 tbsp rice malt syrup

  • 1 tbsp coconut yogurt

  • 1 tsp vanilla extract

  • Pinch of salt

Middle layer

  • 125g raspberries

  • 2 tbsp rice malt syrup

  • 1 tbsp almond butter

  • 4 tbsp coconut oil

Top layer

  • 6 tbsp cacao powder

  • 4 tbsp melted coconut oil

  • 2 tbsp maple syrup 

METHOD

  1. Line a baking tin (20cm x 20cm) with baking paper 

  2. Place ingredients for bottom layer in a blender & blend until mixture is broken down into a sticky crumble. Press the mixture into baking tray

  3. Place ingredients for middle layer into blender & blend until smooth. Pour mixture over the base layer & place in the freezer to set 

  4. Once middle layer is set (10ish mins) place ingredients for top layer into a bowl and mix well until combined. Pour mixture on top of slice, spread it all over & place in the freezer to set & store!

  5. Let it set overnight for the best result!
