Frozen Raspberry Slice

INGREDIENTS
Base layer
1 cup dessicated coconut
1 cup almonds
2 tbsp almond butter
10 dates
3 tbsp cacao powder
1 tbsp rice malt syrup
1 tbsp coconut yogurt
1 tsp vanilla extract
Pinch of salt
Middle layer
125g raspberries
2 tbsp rice malt syrup
1 tbsp almond butter
4 tbsp coconut oil
Top layer
6 tbsp cacao powder
4 tbsp melted coconut oil
2 tbsp maple syrup
METHOD
Line a baking tin (20cm x 20cm) with baking paper
Place ingredients for bottom layer in a blender & blend until mixture is broken down into a sticky crumble. Press the mixture into baking tray
Place ingredients for middle layer into blender & blend until smooth. Pour mixture over the base layer & place in the freezer to set
Once middle layer is set (10ish mins) place ingredients for top layer into a bowl and mix well until combined. Pour mixture on top of slice, spread it all over & place in the freezer to set & store!
Let it set overnight for the best result!
