Chewy Oat & Sultana Cookies

MAKES 12 COOKIES

INGREDIENTS

  • 1 cup buckwheat flour 

  • 1/4 cup coconut sugar 

  • 1 cup oats (use GF oats if needed)

  • 1 tsp cinnamon 

  • 2 tsp baking powder 

  • 1/4 cup maple syrup 

  • 1/4 cup melted coconut oil 

  • 2 eggs 

  • 3/4 cup sultanas

RECIPE

  1. Preheat oven to 180 degrees C

  2. Combine all dry ingredients in a bowl

  3. Add wet ingredients and mix to combine 

  4. Fold in sultanas

  5. Spoon out mixture onto a lined baking tray 

  6. Bake in preheated oven for 10 mins 

  7. Do not touch cookies when they first come out of the oven as will be super soft. Let them cool on baking trays for at least 10 mins before transferring them to a cooling tray
