Chewy Nut & Seed Brittle
MAKES ROUGHLY 8 SERVINGS

INGREDIENTS
1/2 cup peanuts
1/2 cup cashews
1/2 cup pepitas
3/4 cup coconut flakes
1/4 cup sesame seeds
3/4 cup sultanas
1/2 cup rice malt syrup
3 tbsp coconut oil
1 tsp salt
1 tsp cinnamon
METHOD
Pulse sultanas, peanuts, cashews & pepitas in blender until broken into smaller pieces
Place blended mixture into a bowl with the rest of the dry ingredients
Melt coconut oil & brown rice syrup until combined
Pour onto dry ingredients & mix to combine
Scoop onto a lined baking tray & smooth out
Bake in oven at 180 degrees for 15 mins
Once cooked, let it cool right down before brake into piece
