Blueberry Oatmeal Muffins
INGREDIENTS
1.5 cups almond meal
1 cup oats, sub for GF oats
1 tsp baking powder
2 tbsp maple syrup
3 chia eggs
1 tsp vanilla
1/4 cup melted coconut oil
1/2 cup almond milk
3 tbsp greek style yogurt, sub for coconut yogurt to make this recipe vegan
1 tbsp apple cider vinegar
1 cup frozen blueberries
METHOD
Preheat oven to 180 degrees celsius
Make your chia eggs by combining 3 tbsp of chia seeds with 6-8 tbsp of water and let sit while you prepare the rest of the ingredients
Combine dry ingredients in a mixing bowl: almond meal, oats & baking powder
Add wet ingredients to the dry and mix to combine: maple syrup, vanilla, coconut oil, almond milk, greek yogurt, apple cider vinegar, chia eggs
Gently fold through blueberries
Grease a muffin tin with some coconut oil or olive oil spray and evenly pour mixture into each muffin hole
Top each muffin with some coconut sugar and bake in preheated oven for 30 mins
