Baked Oat Muffins

MAKES 6 MUFFINS

  • Dairy Free

RECIPE

  1. Combine the following ingredients in a food processor or high speed blender:
    – 1 ripe banana
    – 1 cup oats
    – 1 tsp baking powder 
    – 1 egg
    – a sprinkle of cinnamon
    – 2 tbsp maple syrup
    – pinch of salt 

  2. Pour the mixture into a greased muffin tin & top with your favourite toppings… I did a mix of dark chocolate, blueberry & raspberry.

  3. Bake in a preheated oven on 180 degrees C for 20 mins or until cooked though & golden on top.

  4. Enjoy as an afternoon snack with some coconut yogurt or as an easy grab & go brekky option.
