Vermicelli Noodle Salad

BASIC LUNCH IDEA

  • Dairy Free

  • Gluten Free

INGREDIENTS

  • Vermicelli noodles

  • Protein of choice: I used BBQ chicken

  • 1/2 a cucumber

  • Kaleslaw mix (bought from woolworths)

  • Lemon

  • Tamari or soy sauce

  • Sweet chilli sauce

RECIPE

  1. Start with a base of vermicelli noodles

  2. Add your choice of protein, here I used some shredded BBQ chicken

  3. Chop up half a cucumber & add to the noodles and chicken

  4. Mix in a handful of kaleslaw mix

  5. Top with dressing: juice of a quarter lemon, 1/2 tbsp tamari & 1/2 tbsp sweet chilli sauce

So simple, fresh & delicious, plus super easy to put together for lunch or dinner.
