EASY LUNCH IDEA

INGREDIENTS

  • 6 eggs

  • 2/3 cup olive oil

  • 1 large carrot, grated

  • 1 capsicum, finely diced

  • 2 large handful spring onion, chopped

  • 2 large handfuls of spinach

    **or any veggies of your choice

  • 1 cup GF flour

  • 1/2 cup nutritional yeast

  • 2 tsp baking powder

  • salt/pepper

RECIPE

  1. Preheat oven to 180 degrees C.

  2. Crack eggs into a large mixing bowl & whisk to combine.

  3. Add olive oil, grated carrot, capsicum, spring onion and spinach. Mix to combine.

  4. Then mix in the flour, nutritional yeast, baking powder + salt/pepper. Mix to combine.

  5. Pour the mixture into a lined baking tray & spread out evenly. Top with extra nutritional yeast.

  6. Place into oven and bake for 45 minutes. Remove from the oven, slice and serve
