Preheat oven to 180 degrees C.
Crack eggs into a large mixing bowl & whisk to combine.
Add olive oil, grated carrot, capsicum, spring onion and spinach. Mix to combine.
Then mix in the flour, nutritional yeast, baking powder + salt/pepper. Mix to combine.
Pour the mixture into a lined baking tray & spread out evenly. Top with extra nutritional yeast.
Place into oven and bake for 45 minutes. Remove from the oven, slice and serve
