Super Simple Summer Salad

INGREDIENTS
Lettuce
Spinach
Cucumber
Capsicum
Baby tomatoes
Avocado
Goats cheese or Feta
METHOD
Base your bowl with lettuce & spinach, massage in some olive oil
Chop your cucumber, capsicum, baby tomatoes & avocado
Add your chopped ingredients to the lettuce & spinach
Top with goats cheese or feta, I love Meredith dairy goats cheese (my favourite cows dairy free option)
TIP: I like to double up my salads, e.g. use only half your ingredients to start, fill up half of the bowl, then top with the other half of ingredients. This ensures the flavours of the salad are spread throughout!
