Chewy & Clustered Honey Granola

MAKES 6 SERVINGS

  • Can be made Vegan

INGREDIENTS

  • 1 cup oats

  • 3/4 cup nuts of your choice - I used almonds and walnuts

  • 1/2 cup coconut flakes

  • Pink salt

  • 1/4 cup honey (sub for rice malt syrup to make vegan)

  • 1 tsp cinnamon

  • 1/4 cup oat milk (or nut milk of choice)

  • Handful of sultanas and goji berries

METHOD

  1. Pre-heat oven to 180 degrees celsius

  2. In a bowl, combine oats, nuts, coconut flakes, cinnamon, salt and mix together

  3. Add honey and oat milk and combine the mixture well, making sure the mixture is fully covered with the wet ingredients

  4. Line a baking tray & place granola onto the tray. In order to get the clusters you will need to keep the granola quite close but flatten it out with a spoon

  5. Place in the oven & bake for 8 mins, check the granola & then bake for another 8 mins

  6. Take the granola out of the oven and let it sit for a few mins. Now add the sultanas & goji berries, carefully break up the granola into chunks and place back into the oven for 8 mins to crisp up the clusters

  7. Let granola cool before storing in a glass jar!
