Zucchini Brownies with salted caramel chocolate chunks

INGREDIENTS
1/3 cup almond meal
1/3 cup coconut flour
2 tbsp cacao powder
2 tsp baking powder
a few cracks of pink salt
2 tbsp of coconut oil with
1/4 cup peanut butter
1 tbsp maple syrup
2 tbsp coconut sugar
1 egg
1/3 cup greek yogurt
1 small grated zucchini
METHOD
Start by mixing together the dry ingredients together in a mixing bowl
Set the dry bowl aside and now mix the wet ingredients in a separate bowl. Starting by melting the coconut oil with the peanut butter, then add the maple syrup, egg, yogurt & zucchini
Combine the wet & dry ingredients then add in 1 small block of chopped salted caramel chocolate
Pour the mixture into a lined baking tray & bake in a preheated oven at 180 degrees C for 15 mins
Let brownie batch cool before cutting up and dusting with some coconut flour
So delicious when served warm with some ice cream!
