Raspberry Chia Jam Cookies
MAKES 6 COOKIES

INGREDIENTS
1.5 cups almond meal
2 tbsp coconut flour
A few cracks of pink salt
1 tsp baking powder
3 tbsp melted coconut oil
2 tbsp maple syrup
1 tsp vanilla
Homemade chia jam - recipe below
METHOD
Preheat oven to 180 degrees celsius
Prepare homemade chia jam (recipe below)
Combine dry ingredients in bowl & set aside - almond meal, coconut flour, salt and baking powder
Combine wet ingredients in a separate bowl - coconut oil, maple syrup & vanilla
Pour wet ingredients into the dry ingredients and mix to combine and form a dough - this dough might be crumbly but when you roll into balls it will stick together
Roll into balls and flatten in a muffin tin (or on a lined tray) the muffin tin just make it easier so that the cookies stay together
Lightly press down on each cookie and scoop 1 tsp of chia jam into the centre
Bake for 13-15 mins or until golden brown
HOMEMADE CHIA JAM RECIPE
INGREDIENTS
1.5 cups frozen raspberries
1/4 cup water
2 tablespoons chia seeds
1 tsp cinnamon
METHOD
Place raspberries and water in a saucepan on medium heat
Stir mixture and cook until the raspberries become soft and break down
Remove from heat and stir in chia seeds and cinnamon
Store in a jar in the fridge
