Raspberry Chia Jam Cookies

MAKES 6 COOKIES

  • Dairy Free

INGREDIENTS

  • 1.5 cups almond meal

  • 2 tbsp coconut flour

  • A few cracks of pink salt

  • 1 tsp baking powder

  • 3 tbsp melted coconut oil

  • 2 tbsp maple syrup

  • 1 tsp vanilla

  • Homemade chia jam - recipe below

METHOD

  1. Preheat oven to 180 degrees celsius

  2. Prepare homemade chia jam (recipe below)

  3. Combine dry ingredients in bowl & set aside - almond meal, coconut flour, salt and baking powder

  4. Combine wet ingredients in a separate bowl - coconut oil, maple syrup & vanilla

  5. Pour wet ingredients into the dry ingredients and mix to combine and form a dough - this dough might be crumbly but when you roll into balls it will stick together

  6. Roll into balls and flatten in a muffin tin (or on a lined tray) the muffin tin just make it easier so that the cookies stay together

  7. Lightly press down on each cookie and scoop 1 tsp of chia jam into the centre

  8. Bake for 13-15 mins or until golden brown

HOMEMADE CHIA JAM RECIPE

INGREDIENTS

  • 1.5 cups frozen raspberries

  • 1/4 cup water

  • 2 tablespoons chia seeds

  • 1 tsp cinnamon

METHOD

  1. Place raspberries and water in a saucepan on medium heat

  2. Stir mixture and cook until the raspberries become soft and break down

  3. Remove from heat and stir in chia seeds and cinnamon

  4. Store in a jar in the fridge
