Hot Cross Bun Cookies

INGREDIENTS
1 egg
1 tsp cinnamon
1/2 tsp nutmeg
1/4 cup coconut oil, melted & cooled
1/2 cup coconut sugar
1 cup almond meal
1/4 cup coconut flour
1 tsp baking powder
1/2 cup sultanas
Coconut flour & water to make the crosses
METHOD
Preheat oven to 180 degrees
Beat the egg, add coconut oil, coconut sugar, cinnamon & nutmeg in a mixing bowl
Add in the almond meal, coconut flour & baking powder, mixing to form a dough
Gently fold in the sultanas
Use a tablespoon to scoop out balls of mixture onto a baking tray, carefully flatten out with your fingers
In a small bowl, mix together some coconut flour and water to create a paste. Put the paste into a zip lock bag and snip the corner. Squeeze out paste to make crosses on each cookie
Bake cookies in preheated oven for 12 mins
