Classic Choc Chip Cookies
MAKES 10 COOKIES

INGREDIENTS
1 cup buckwheat flour
1/2 cup coconut sugar
1 tsp baking powder
pinch of pink salt
1/3 cup melted coconut oil
1 tsp natural vanilla extract
1 egg
Half a block chopped dark chocolate
METHOD
Preheat oven to 180 degrees fan forced
Combine dry ingredients (except dark choc) in a bowl and set aside
Combine wet ingredients in a separate bowl and whisk together with a fork
Add wet ingredients to dry ingredients and mix to form a dough
Chop dark chocolate and fold into cookie dough (save some chocolate to put on top of cookies)
Spoon out tablespoons of mixture, roll into balls and slightly flatten on a lined baking tray
Place some extra chopped dark choc into your cookies
Bake in preheated oven for 10-12 mins, until golden and crispy
Let cool and serve!
