Classic Choc Chip Cookies

MAKES 10 COOKIES

  • Gluten Free

  • Dairy Free

INGREDIENTS

  • 1 cup buckwheat flour

  • 1/2 cup coconut sugar

  • 1 tsp baking powder

  • pinch of pink salt

  • 1/3 cup melted coconut oil

  • 1 tsp natural vanilla extract

  • 1 egg

  • Half a block chopped dark chocolate

METHOD

  1. Preheat oven to 180 degrees fan forced

  2. Combine dry ingredients (except dark choc) in a bowl and set aside

  3. Combine wet ingredients in a separate bowl and whisk together with a fork

  4. Add wet ingredients to dry ingredients and mix to form a dough

  5. Chop dark chocolate and fold into cookie dough (save some chocolate to put on top of cookies)

  6. Spoon out tablespoons of mixture, roll into balls and slightly flatten on a lined baking tray

  7. Place some extra chopped dark choc into your cookies

  8. Bake in preheated oven for 10-12 mins, until golden and crispy

  9. Let cool and serve!
