Pork & Chive Meatballs with Yogurt Dipping Sauce

INGREDIENTS

MEATBALLS

  • Roughly 300-500g pork mince

  • 2 handfuls frozen spinach, thawed

  • 2 handfuls of chopped shallots

  • 1 tbsp garlic oil (for IBS) or 1 clove of fresh garlic

  • 1 egg

  • 1/4 cup almond meal

  • Pink Salt

YOGURT DRESSING

  • 1/3 cup yogurt

  • 2 tbsp tahini

  • ½ juice lime 

  • ½ tsp sumac

  • Parsley flakes

  • Salt 

METHOD

  1. Preheat the oven to 200 degrees celsius and line a baking tray with baking paper

  2. Chop spinach and shallots

  3. In a large bowl, combine pork mince, chopped spinach, shallots, garlic oil, egg, almond meal and salt

  4. Using a tablespoon, spoon out mixture and roll into meatballs and put on the lined baking tray

  5. Bake the meatballs in the preheated oven for about 30 mins, turning over once

  6. Whilst meatballs are in the oven, prepare your yogurt dressing by combining the above ingredients in a small bowl

  7. Once meatballs are cooked, place on a plate with yogurt dressing and toothpicks for serving
