METHOD
Heat olive oil in a frypan until hot
Cook turkey mince until browned and cooked through
Whilst turkey mince is cooking; grate carrot and zucchini & dice tomatoes
Once turkey mince is cooked add your grated and diced veggies and mix through
Next add the paprika, cumin and tumeric and mix through until mixture is combined and veggies are soft
Transfer to a glass container and store in the fridge for lunches or serve for dinner.
I have served mine above with sweet potato mash, spinach, avocado, hemp seeds + a drizzle of tahini for lunch.
