Easy Lunch Prep Idea: Turkey Mince & Veggie Salad

SERVES 3-4

  • Gluten Free

  • Dairy Free

INGREDIENTS

  • 500g turkey mince

  • 1 capsicum

  • 2 carrots

  • Handful of shallots

  • Garlic oil

  • 2 tbsp tamari or soy sauce

  • Handful of Spinach

  • Pre baked sweet potato

  • Tahini Dressing (recipe below)

METHOD

  1. Cook turkey mince in a pan with some garlic oil until cooked through

  2. Whilst meat is cooking, chop capsicum and shallots and grate carrot

  3. Once the turkey is cooked, add the capsicum, shallots, carrot and tamari to the pan

  4. Once the veggies have softened a little, remove from the pan and add a few spoonfuls to a bowl or container with some spinach, pre baked sweet potato and tahini dressing (leave the dressing on the side of your taking this to work or school and add when your ready to eat)

  5. Leave the remainder of the turkey and veg mix in an air tight container in the fridge to add to salads for your week!

TAHINI DRESSING RECIPE

  • Combine 3 tbsp Olive Oil, 2 tbsp Tahini, 1 tbsp Apple Cider Vinegar and 1/2 tbsp honey in a jar and shake until combined
