Mexican Bowl 🌮

1. Cook 500g of beef mince in some garlic oil & season with heaps of cumin, paprika & chilli flakes. Add in 1 small tin of tomato paste and cook through.
2. While the meat is cooking, wash & chop some iceberg lettuce, dice some baby tomatoes & smash some avo with lime & salt. 
3. Once the meat is cooked, steam your firecracker rice in the microwave for 2 mins.
4. Serve your rice & mince in a bowl and top with the shredded lettuce, tomatoes & avo! I also added a dollop of Greek yogurt as a healthier sour cream option (cheese can also be added here)
