
You will need
- 1 packet pasta of choice – I used buckwheat pasta which is a GF pasta alternative
- A few large handfuls of spinach
- 2 carrots
- 3-4 tins of chilli tuna (95g tins)
- 1 avocado
- 1 lemon
- Tahini dressing (recipe below)
instructions
- Boil pasta as per packet instructions
- Peel and grate carrots, dice avocado & slice lemon
- Once pasta is cooked, combine in a bowl with grated carrot, spinach and chilli tuna – also add the oil of the tuna to help combine everything and for more flavour!
- Serve into bowls and top with diced avocado, tahini dressing and a slice of lemon
Tahini dressing recipe
- Mix 2 tbsp of tahini, 3 tbsp olive oil, 1 tsp honey & 1 tbsp apple cider vinegar in a jar with some water and shake to combine
