Blueberry Oatmeal Muffins

The perfect morning snack or even a quick and easy on the go brekky idea. This recipe is full of fibre and nutritious ingredients that will help keep you fuller for longer!

*This recipe is GF and can also be made completely vegan by substituting the yogurt for a vegan yogurt alternative!

you will need

  • 1.5 cups almond meal
  • 1 cup oats
  • 1 tsp baking powder
  • 2 tbsp maple syrup
  • 3 chia eggs
  • 1 tsp vanilla
  • 1/4 cup melted coconut oil
  • 1/2 cup almond milk
  • 3 tbsp greek style yogurt
  • 1 tbsp apple cider vinegar
  • 1 cup frozen blueberries

Instructions

  1. Preheat oven to 180 degrees celsius 
  2. Make your chia eggs by combining 3 tbsp of chia seeds with 6-8 tbsp of water and let sit while you prepare the rest of the ingredients
  3. Combine dry ingredients in a mixing bowl: almond meal, oats & baking powder
  4. Add wet ingredients to the dry and mix to combine: maple syrup, vanilla, coconut oil, almond milk, greek yogurt, apple cider vinegar, chia eggs
  5. Gently fold through blueberries
  6. Grease a muffin tin with some coconut oil or olive oil spray and evenly pour mixture into each muffin hole 
  7. Top each muffin with some coconut sugar and bake in preheated oven for 30 mins
