Scrambled Egg Bowl

you will need

  • 2 eggs
  • Pre baked veggies – sweet potato & pumpkin
  • Handful of spinach
  • Handful of kale
  • 1/4 of an avocado
  • Parsley flakes
  • Tahini
  • Salt & pepper

instructions

  1. Begin by sautéing the kale in a pan with a drizzle of olive oil and salt
  2. While kale is cooking, crack 2 eggs into a small bowl and whisk with parsley and salt/pepper
  3. Heat veggies in microwave or oven
  4. Place spinach and avocado in serving bowl
  5. Add whisked eggs to the pan and cook – as the eggs start to cook use a spoon to gently push them around & scramble them
  6. Add cooked eggs, kale and heated veggies to your serving bowl
  7. Top with a drizzle of tahini and hemp seeds (optional)!
