
you will need
- 2 eggs
- Pre baked veggies – sweet potato & pumpkin
- Handful of spinach
- Handful of kale
- 1/4 of an avocado
- Parsley flakes
- Tahini
- Salt & pepper
instructions
- Begin by sautéing the kale in a pan with a drizzle of olive oil and salt
- While kale is cooking, crack 2 eggs into a small bowl and whisk with parsley and salt/pepper
- Heat veggies in microwave or oven
- Place spinach and avocado in serving bowl
- Add whisked eggs to the pan and cook – as the eggs start to cook use a spoon to gently push them around & scramble them
- Add cooked eggs, kale and heated veggies to your serving bowl
- Top with a drizzle of tahini and hemp seeds (optional)!
