
These are a simple and delicious idea to make for the pre xmas lunch hunger.. these are oven baked meatballs so all you need to do is mix all of the ingredients in a bowl, roll into balls and pop in the oven to bake! They are also delicious in a salad – I ate all of these within 2 days!!
you will need:
For the meatballs
- Roughly 300-500g pork mince
- 2 handfuls frozen spinach, thawed
- 2 handfuls of chopped shallots
- 1 tbsp garlic oil (for IBS) or 1 clove of fresh garlic
- 1 egg
- 1/4 cup almond meal
- Pink Salt
for the Yogurt Dressing
- 1/3 cup yogurt
- 2 tbsp tahini
- ½ juice lime
- ½ tsp sumac
- Parsley flakes
- Salt
Instructions
- Preheat the oven to 200 degrees celsius and line a baking tray with baking paper
- Chop spinach and shallots
- In a large bowl, combine pork mince, chopped spinach, shallots, garlic oil, egg, almond meal and salt
- Using a tablespoon, spoon out mixture and roll into meatballs and put on the lined baking tray
- Bake the meatballs in the preheated oven for about 30 mins, turning over once
- Whilst meatballs are in the oven, prepare your yogurt dressing by combining the above ingredients in a small bowl
- Once meatballs are cooked, place on a plate with yogurt dressing and toothpicks for serving \
