
I have finally perfected the clustered style granola and I am so excited.. I can’t stop eating it! The trick I used to make these chewy clusters was adding a small amount of oat milk to the mixture.. crazy I know, but it works! The oats and nuts soak up the milk a little and stick together.. so when they are in the oven they end up baking together as clusters. This is such an easy recipe to make and so yummy, trust me you’ll be snacking on this at any chance you get. Enjoy & please share your re-creations with me on insta.. I love seeing them!
You will need:
- 1 cup oats
- 3/4 cup nuts of your choice – I used almonds and walnuts
- 1/2 cup coconut flakes
- Pink salt
- 1/4 cup honey
- 1 tsp cinnamon
- 1/4 cup oat milk (almond milk would also work)
- Handful of sultanas and goji berries
instructions:
- Pre-heat oven to 180 degrees celsius
- In a bowl, combine oats, nuts, coconut flakes, cinnamon, salt and mix together
- Add honey and oat milk and combine the mixture well, making sure the mixture is fully covered with the wet ingredients
- Line a baking tray & place granola onto the tray. In order to get the clusters you will need to keep the granola quite close but flatten it out with a spoon
- Place in the oven & bake for 8 mins, check the granola & then bake for another 8 mins
- Take the granola out of the oven and let it sit for a few mins. Now add the sultanas & goji berries, carefully break up the granola into chunks and place back into the oven for 8 mins to crisp up the clusters
- Let granola cool before storing in a glass jar!
