Meal Prep Idea: Mexican Turkey & Veggie Mix

I love to be organised for my week and this includes meal prepping so that I have lunch options for work. This week I cooked up a Mexican style turkey and veggie mix that I am going to have with sweet potato mash, avocado and spinach! But this recipe would also be delicious for dinner with some rice, baked potato or sweet potato or even on its own with some cheese to top! Such a versatile, super yummy recipe that can be put with anything you like… give it a go and let me know what you think!

You will need
  • 1 packet turkey mince
  • 1 carrot
  • 1 zucchini
  • 2 tomatoes
  • Olive oil for cooking
  • 2 tbsp ground paprika
  • 2 tbsp ground cumin
  • 2 tsp ground tumeric
  • Chilli flakes
instructions
  1. Heat olive oil in a frypan until hot
  2. Cook turkey mince until browned and cooked through
  3. Whilst turkey mince is cooking; grate carrot and zucchini & dice tomatoes
  4. Once turkey mince is cooked add your grated and diced veggies and mix through
  5. Now add the paprika, cumin and tumeric and mix through until mixture is combined and veggies are soft
  6. Transfer to a glass container and store in the fridge for lunches or serve for dinner!
