Vegan Raspberry Muffins

These muffins are vegan and can be made GF by changing the flour. They are made with wholesome ingredients and have only a very small amount of natural sugars! They are so moist and delicious, making the perfect guilt free morning or afternoon treat!

You will need:
  • 2 cups spelt flour (or GF flour for a GF option)
  • 1/4 cup coconut sugar
  • 2 tsp baking powder
  • 1 tbsp Apple Cider Vinegar
  • 3 chia eggs
  • 1/3 cup melted coconut oil
  • 1 cup coconut milk
  • 2 tbsp maple syrup
  • 2 cups frozen raspberries
INstructions:
  1. Preheat oven to 180 degrees celsius
  2. Make your chia eggs by combining 3 tbsp of chia seeds with 6-8 tbsp of water and let sit while you prepare the rest of the ingredients
  3. Combine dry ingredients in a mixing bowl: flour, coconut sugar and baking powder
  4. Add wet ingredients to the dry: ACV, coconut milk, coconut oil, maple syrup and chia eggs
  5. Gently fold through raspberries
  6. Grease a muffin tin with some coconut oil and evenly pour mixture into each muffin hole
  7. Top each muffin with some extra coconut sugar and bake for 20 mins
