
These muffins are vegan and can be made GF by changing the flour. They are made with wholesome ingredients and have only a very small amount of natural sugars! They are so moist and delicious, making the perfect guilt free morning or afternoon treat!
You will need:
- 2 cups spelt flour (or GF flour for a GF option)
- 1/4 cup coconut sugar
- 2 tsp baking powder
- 1 tbsp Apple Cider Vinegar
- 3 chia eggs
- 1/3 cup melted coconut oil
- 1 cup coconut milk
- 2 tbsp maple syrup
- 2 cups frozen raspberries
INstructions:
- Preheat oven to 180 degrees celsius
- Make your chia eggs by combining 3 tbsp of chia seeds with 6-8 tbsp of water and let sit while you prepare the rest of the ingredients
- Combine dry ingredients in a mixing bowl: flour, coconut sugar and baking powder
- Add wet ingredients to the dry: ACV, coconut milk, coconut oil, maple syrup and chia eggs
- Gently fold through raspberries
- Grease a muffin tin with some coconut oil and evenly pour mixture into each muffin hole
- Top each muffin with some extra coconut sugar and bake for 20 mins
