
Choc chip cookies are one of those all time favourite snacks that you just can’t say no to! I wanted to create an easy recipe to follow that’s delicious but also healthy… so you can all eat the choc chip cookies you want, without the guilt! Hope you enjoy this recipe #bakingwithge
You will need
- 1 cup buckwheat flour
- 1/2 cup coconut sugar
- 1 tsp baking powder
- pinch of pink salt
- 1/3 cup melted coconut oil
- 1 tsp natural vanilla extract
- 1 egg
- Half a block chopped dark chocolate – I use Loving Earth
How to make
- Preheat oven to 180 degrees fan forced
- Combine dry ingredients (except dark choc) in a bowl and set aside
- Combine wet ingredients in a separate bowl and whisk together with a fork
- Add wet ingredients to dry ingredinets and mix to form a dough
- Chop dark chocolate and fold into cookie dough (save some chocolate to put on top of cookies)
- Spoon out tablespoons of mixture, roll into balls and slightly flatten on a lined baking tray
- Place some extra chopped dark choc into your cookies
- Bake in preheated oven for 10-12 mins, until golden and crispy!
- Let cool and serve!
