
I decided to get creative this afternoon and bake an Easter inspired treat for the long weekend. I looooove hot cross buns but sometimes they are a little bit too heavy on my stomach! So I thought I would come up with a lighter version that tastes similar, but still gets me in the mood to celebrate Easter! You will need:
- 1 egg
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup coconut oil, melted & cooled
- 1/2 cup coconut sugar
- 1 cup almond meal
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1/2 cup sultanas
- Coconut flour & water to make the crosses
Method:
- Preheat oven to 180 degrees
- Beat egg, add coconut oil, coconut sugar, cinnamon & nutmeg
- Add almond meal, coconut flour & baking powder, mix to form a dough
- Fold in sultanas
- Use a tablespoon to scoop out balls of mixture onto a baking tray, carefully flatten out with your fingers
- In a small bowl, mix together some coconut flour and water to create a paste. Put the paste into a zip lock bag and snip the corner. Squeeze out paste to make crosses on each cookie. My crosses weren’t amazing but at least I had a go!
- Bake cookies in preheated oven for 12 mins
