Zucchini Brownies with Salted Caramel chocolate chunks

DF & GF zucchini brownies?? Don’t hate them until you’ve given them a go!

I was craving brownies the other night for dessert… usually brownies take such a long time to cook in the oven so my mission was to create something that was going to be quick! With the help of my sis, we threw a whole heap of ingredients in a bowl until we had the right consistency (and yes this included zucchini – I think this is what made them so perfect), mixed it all together and popped into the oven hoping for the best! 15 minutes later, we pulled out a brownie batch that smelt amazing and looked cooked to perfection! Have a go at putting these ingredients together to create a super soft, fluffy and chunky chocolate brownie!!!

Here’s what you’ll need to do:
Start by mixing together the following dry ingredients in a bowl:
  • 1/3 cup almond meal
  • 1/3 cup coconut flour
  • 2 tbsp cacao powder
  • 2 tsp baking powder
  • 3 cracks of pink salt
Set the dry bowl aside and now mix the following ingredients in a bowl:
  • Start by melting 2 tbsp of coconut oil with 1/4 cup peanut butter, then add:
  • 1 tbsp maple syrup
  • 2 tbsp coconut sugar
  • 1 egg
  • 1/3 cup greek yogurt
  • 1 small grated zucchini
Mix the two bowls of ingredients together and then add in 1 small block of chopped ‘Salted Caramel Swayzee’ chocolaTE
pour into a lined baking tray & BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 15 MINUTES
POKE A KNIFE IN THE CENTRE OF THE BROWNIE MIXTURE & IF IT COMES OUT CLEAN THEN IT IS READY!

Let brownie batch cool before cutting up and dusting with some coconut flour. So delicious when served warm with some ice cream. Store in the fridge!
