Noodle Stir Fry (Pad Thai Style)

I was feeling like Thai on Friday night but a lot of take away Thai dishes repeat on me and don’t make me feel the best… so I like to make my own healthy versions. Using fresh veggies, pork mince and a homemade sauce I came up with this delicious combo that was very similar to a pad Thai! Highly recommend giving this a go if your craving Thai but want a bit of a healthier option!

You will need:

  • Organic pork mince (use 500g to serve 2-3 people)
  • 1 zucchini
  • 1 carrot
  • Large handful of snow peas
  • Large handful of edamame beans
  • 1 lemon
  • Brown rice pad Thai style noodles – I got these from Maloneys grocer
  • Home made sauce (recipe below)
  • Bean sprouts (to top)
  • Sesame seeds (to top)

Home made sauce:

  • 1/4 cup Tamari or soy sauce
  • 1 tbsp ginger
  • 1 tbsp tahini
  • 2 tbsp fish sauce
  • Chilli flakes
  • Handful of shallots
  • A dash of water

How to make:

  1. Begin by cooking your pork mince in sesame oil & garlic oil – you can add actual garlic here too but I use garlic oil because of my IBS
  2. Prepare home made sauce
  3. Grate zucchini and carrot, chop snow peas, prepare edamame beans
  4. Cook your noodles as per packet instructions
  5. Once the pork mince is cooked – add carrot, zucchini, edamame beans and cooked noodles
  6. Mix together and top with your home made sauce and the juice of 1 lemon
  7. Throw in your snow peas at the end so they stay crunchy (I find when I put my snow peas in with the other veggies they go very soggy)
  8. Serve in a bowl and top with bean sprouts and sesame seeds!
