Berry Crumble

This berry crumble is one of my favourite desserts to make, especially when having some friends over for dinner! Having apple crumble for dessert is a big childhood memory of mine as my Nanna used to always have one in the freezer ready to pop in the oven after dinner. These days I don’t eat apple as it gives me really bad indigestion so I have created my very own version with berries & a healthy crumble – it is so delicious & everyone in my family loves it! Best served warm with some ice cream or coconut yogurt!

Ingredients for the filling:

  • 1 packet frozen mixed berries, thawed
  • 2 tbsp coconut sugar
  • 2 tbsp coconut flour
  • 1/2 juice of lemon

Ingredients for the crumble:

  • 1 cup almond meal
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • Pink salt
  • 2 tbsp coconut sugar
  • 1/2 cup coconut oil
  • 1/4 cup almond milk

How to make:

  1. Preheat oven to 180 degrees celsius
  2. Place all of the filling ingredients in a bowl and mix together. Put this into an oven proof baking tray/dish
  3. Mix all of the ingredients for the topping together in a bowl.
  4. Evenly spread out the topping mixture on top of the berry mixture and bake in the oven for about 20-25 minutes.
  5. Serve with ice cream or coconut yogurt!

(This makes quite a big crumble that will feed about 6 people. Just half the ingredients if you are wanting to make a smaller one!)
