Chewy Nut & Seed Brittle


Looking for a yummy afternoon treat that’s full of wholesome healthy ingredients!?
think peanut sesame flavours with crispy coconut & sweet chewy bites!
* vegan, gluten free, paleo *

You will need:

  • 1/2 cup peanuts
  • 1/2 cup cashews
  • 1/2 cup pepitas
  • 3/4 cup coconut flakes
  • 1/4 cup sesame seeds
  • 3/4 cup sultanas
  • 1/2 cup rice malt syrup
  • 3 tbsp coconut oil
  • 1 tsp salt
  • 1 tsp cinnamon

How to make:

  • Pulse sultanas, peanuts, cashews & pepitas in blender until broken into smaller pieces
  • Place blended mixture into a bowl with the rest of the dry ingredients
  • Melt coconut oil & brown rice syrup until combined
  • Pour onto dry ingredients & mix to combine
  • Scoop onto a lined baking tray & smooth out
  • Bake in oven at 180 degrees for 15 mins
  • Once cooked, let it cool right down before brake into piece
