Get baking with these thick, delicious crunchy but soft & chewy biscuits. Best served fresh & warm out of the oven!
You will need:
- 1 egg
- 1 tsp vanilla
- 1/4 cup coconut oil, melted & cooled
- 1/2 cup coconut sugar
- 1 cup almond meal
- 1/4 cup coconut flour
- 1 tsp baking powder
- 1 heaped tbsp almond butter
- Vegan choc squares from @nakedfoods
Method:
- Preheat oven to 180 degrees
- Beat egg, add coconut oil, coconut sugar & vanilla
- Add almond meal, coconut flour & baking powder, mix to form a dough
- Fold in almond butter
- Use a tablespoon to scoop out balls of mixture onto a baking tray, carefully flatten out with your fingers
- Place 1 square of choccy into each cookie
- Bake in preheated oven for 12 mins
