Almond Butter Biccies

– GF, DF, Paleo – 
Get baking with these thick, delicious crunchy but soft & chewy biscuits. Best served fresh & warm out of the oven! 

You will need:

  • 1 egg
  • 1 tsp vanilla
  • 1/4 cup coconut oil, melted & cooled
  • 1/2 cup coconut sugar
  • 1 cup almond meal
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1 heaped tbsp almond butter 
  • Vegan choc squares from @nakedfoods

Method:

  • Preheat oven to 180 degrees
  • Beat egg, add coconut oil, coconut sugar & vanilla
  • Add almond meal, coconut flour & baking powder, mix to form a dough
  • Fold in almond butter
  • Use a tablespoon to scoop out balls of mixture onto a baking tray, carefully flatten out with your fingers
  • Place 1 square of choccy into each cookie
  • Bake in preheated oven for 12 mins
