
This is one of my favourite dishes to create when I have friends coming over for dinner! It’s really easy to prepare & everyone enjoys it as they get to choose the ingredients they include in their bowl!
You will need:
- Breast chicken
- Lettuce
- Spinach
- Carrot
- Cucumber
- Capsicum
- Shallots
- Avocado
- Mayo – I use vegan mayo
- Sesame seeds
- Rice
(How much you use will depend on how many people your feeding, I’m usually making for 4-6 people so use at least 1 lettuce, 2 carrots, cucumbers & capsicums, whole avo etc. – may need to just use 1 if your making for 1-2 people)
Teriyaki sauce:
- 1/3 cup tamari/soy sauce
- 1 tbsp water
- 1 tbsp honey
- 1 tbsp garlic or garlic oil if you have IBS
- 1 tbsp ginger
- Small handful thinly sliced shallots
Method:
- Prepare teriyaki sauce & marinate your chicken. Let chicken sit in sauce while you prepare the rest of the ingredients.
- Wash and chop lettuce, cucumber & capsicum, grate carrot, wash spinach and mash avocado
- Cook your chicken on the stove
- Prepare your rice: either in rice cooker or I sometimes just use microwave rice)
- Once chicken is cooked, place all your ingredients in a bowl & top with mashed avo, mayo, sesame seeds & more teriyaki sauce if needed
