
One of my all time favourite recipes. There’s something about this dish that makes me so excited to eat dinner! I think it’s because it’s ‘Mexican’ – everyone loves a good Mexican meal right?! I definitely do, but unfortunately there’s so many hidden ingredients in take out versions that really upset my stomach. That’s why I decided to create my own healthy version that tastes so good, maybe even better (hehe). Give it a go & see if your tastebuds approve!
You will need:
- 1 medium sweet potato
- 500g beef mince
- 1 bottle tomato passata sauce
- Lettuce
- 1 Carrot
- Mashed avocado
- Cheese of your choice (I use goats cheese)
Method:
- Wash & chop your sweet potato into thin circles: season with turmeric & cinnamon, bake at 200 degrees celsius until crispy
- Wash, chop lettuce & grate carrot
- Mash avocado
- Cook beef mince in garlic oil (can use normal garlic) season with paprika, ground cumin & add bottle of tomato passata
- Serve meat in a bowl on top of lettuce & carrot. Top with mashed avocado & cheese of your choice
- Place sweet potato chips around the sides of your bowl
