
You will need:
- 1 medium sweet potato
- 1 Carrot
- 1 zucchini
- 1 egg
- 1 cup spelt flour
- 1 tsp baking powder
- 1 cup almond milk
- Paprika
- Salt & pepper
Method:
- Peel & grate your sweet potato, carrot & zucchini, squeeze out excess liquid & place in a bowl
- Add the flour, baking powder, paprika & salt/pepper to the grated veges
- Add egg & milk, stir to combine mixture
- Heat some oil in a pan & drop in spoonfuls of mixture, flatten out and cook on either side until browned
- Enjoy as a side for brekky, lunch or dinner!
