Super Simple Summer Salad

This easy, fresh & delicious summer salad is the perfect salad to take to a dinner, bbq or picnic when your not feeling like making something super time consuming. It only takes about 10 mins to put together but looks like it took you ages, love that! Also a perfect side dish with some protein of your choice – salmon or chicken would work well. 

You will need:

  • Lettuce
  • Spinach
  • Cucumber
  • Capsicum
  • Baby tomatoes
  • Avocado
  • Goats cheese or Feta 

Method:

  • Base your bowl with lettuce & spinach, massage in some olive oil
  • Chop your cucumber, capsicum, baby tomatoes & avocado
  • Add your chopped ingredients to the lettuce & spinach
  • Top with goats cheese or feta, I love Meredith dairy goats cheese (my favourite dairy free option) 

TIP: I like to double up my salads, e.g. use only half your ingredients to start, fill up half of the bowl, then top with the other half of ingredients. This ensures the flavours of the salad are spread throughout!
