Schnitzel & Veggie Nourish Bowl

This nourish bowl is full of yummy, wholesome goodness that will keep you nice & full, helping you get through the afternoon! When I made this bowl I already had all of the ingredients pre cooked as they were leftovers, but you could easily cook up a batch of everything & store in the fridge as meal prep for a few days – OR make this meal for dinner but double it so you have enough for lunch the next day! 

You will need:

Method:

  • Wash, chop & season sweet potato with cinnamon. Bake in the oven on 200 degrees until browned (20-25 mins) 
  • Cook up your schnitzel on the pan
  • Sautee kale & broccolini in some olive oil & salt until crispy
  • Throw all ingredients together in a bowl & top with tahini mustard dressing 

Tahini Mustard Dressing

Mix together 1 tbsp tahini, 1 tsp organic seeded mustard, juice of ¼ lemon
