
This nourish bowl is full of yummy, wholesome goodness that will keep you nice & full, helping you get through the afternoon! When I made this bowl I already had all of the ingredients pre cooked as they were leftovers, but you could easily cook up a batch of everything & store in the fridge as meal prep for a few days – OR make this meal for dinner but double it so you have enough for lunch the next day!
You will need:
- Kale
- Broccolini
- Roasted Sweet Potato
- Grated Carrot
- Chicken Schnitzel – sometimes I buy this from the grocers or use my healthy schnitzel recipe: https://gehealthylife.wordpress.com/healthy-schnitzel-served-with-salad/
Method:
- Wash, chop & season sweet potato with cinnamon. Bake in the oven on 200 degrees until browned (20-25 mins)
- Cook up your schnitzel on the pan
- Sautee kale & broccolini in some olive oil & salt until crispy
- Throw all ingredients together in a bowl & top with tahini mustard dressing
Tahini Mustard Dressing
Mix together 1 tbsp tahini, 1 tsp organic seeded mustard, juice of ¼ lemon
