We have been making this salad in our household for so many years, it always accompanies our BBQ’s as it’s a super, easy and delicious side dish. This salad also works well for leftovers, I like to add a bit of chicken the next day as a yummy lunch option!
All you need is:
- Roasted pumpkin
- Goats cheese or feta
What to do:
- Chop pumpkin & place in the oven on 200 degrees C until cooked through – this will usually take 30-40 mins
- Once pumpkin is cooked, assemble your salad. Start with spinach, add the roasted pumpkin, chopped up avocado & sprinkle with cheese
